I have a thing about keeping fresh eggs in the house. But, we don't use that many eggs. That means that I am frequently throwing away expired cartons of eggs from which only one or two eggs have been used. Sometimes we buy the half dozen, but this rarely eliminates the egg waste, and they are almost as expensive as the whole dozen.
Does anyone else have this problem?
We run through milk and bananas like crazy, though, and we very rarely throw those out because they are past their prime.

Maybe this isn't the solution for you, but I love pickled eggs. And they keep a long time. My husband likes deviled eggs, which are a big pain in the but to make.
Jason makes pumpkin bread for his breakfast and it takes 5 eggs so we definately use ours.
