Somewhere between Flagstaff and Phoenix...

...while the kids were sleeping in the backseat, we got off the freeway to do a little off-roading...

...and found a tasty-looking prickly pear. And by tasty-looking, I really mean NOT-AT-ALL-tasty-looking-to-me, but my darling husband has always wanted to cut open a cactus and eat it...so it was looking very appetizing to him...

...so he pulled out his trusty knife and started cutting...

...very carefully. Because it is a cactus, after all. And after he had cut off all the large thorns, it was still covered with what looked like some yellow fur. You know, like the fuzzy skin of a peach. Only it wasn't like a peach at all! All those little tiny yellow furs were actually thorns!

See a good half-dozen of them stuck in this thumb? But he was determined and not about to let that stop him...

...from ending up with a good half-dozen of them stuck in his tongue! But mission accomplished, and that's what is really important. He can now say he cut open a tasty cactus to eat while in the middle of the Arizona desert!
