Well, not my Grandma, anyways. Maybe your Grandma made pot roast like this, and if she did, she was one cool lady.
I made this tonight, and it's my new favorite pot roast.
Ingredients:
3 to 3 1/2 lb beef roast
2 TBSP olive oil
1 onion, coarsely chopped
3 tsp minced garlic
2 TBSP grated fresh ginger
16 oz whole white mushrooms
2 cups beef broth
1/3 cup soy sauce
1/4 cup fresh cilantro
2 red sweet peppers, cut into 1 inch squares
Directions:
Preheat oven to 350 degrees.
Trim fat from roast and season with salt and pepper. Roast meat in olive oil to brown on all sides.
Cook onion, garlic and ginger in oil until soft.
Bring broth, soy sauce to boil. Add mushrooms, cilantro and onion mixture.
Put roast in roasting pan. Pour sauce over and roast (covered) for 1 to 2 hours. Add red peppers for last 30 minutes.
Serve with cooked egg noodles or mashed potatoes.
