I made soup!
And it was really good, so I want to keep track of what I did, so I can make it again.
You know that's how I cook.
Magic happens, and then the spell book is written.
Ingredients:
3 Tbsp butter
2 cups sliced leeks
1 cup sliced fennel
2-3 garlic cloves
2 cups diced potatoes
1 qt ginger miso broth
2 bay leaves
Freshly ground pepper
Sea salt
1 Tbsp lemon juice
1/2 cup milk
Fennel fronds
Air dried shallots
Directions:
Saute the leeks, fennel and garlic in the butter for 20-30 minutes, but do not brown. Add the potatoes, bay leaves, salt, pepper and broth. Boil, then simmer for 30 minutes until the potatoes are tender. Use the immersion blender and smooth it. Stir in the lemon juice and milk. Top with fennel fronds and fresh pepper and shallots. Serve with bread. Eat. Enjoy. Appreciate your life choices. Magic.
