Kevin bought *more* blueberries!

Kevin stopped at the local farm again on his way home from work and bought - wait for it - blueberries!

But not like 10 pounds again. More like a pint. Or a quart. I really don't know.

But I do know that the 2 cups of fresh blueberries I used in the following recipe hardly made a dent.

Blueberry Kuchen

(and that's pronounced Coo-hen, just in case you were wondering - it's German)

Cake Ingredients:

1/2 cup butter, softened
1/3 cup sugar
1 egg
1/2 tsp. pure vanilla extract
1 tsp. baking powder
1 1/4 cups flour
2 cups fresh blueberries

Streusel Topping:

1 TB butter, melted
2 TB sugar
2 TB flour
1 pinch cinnamon
1 dash pure vanilla extract

Directions:

Grease and flour an 8 inch springform pan. Preheat oven to 375 degrees. Cream together butter, sugar, egg and vanilla. Add the baking powder, salt and flour. Stir until smooth. If necessary, add a drop or two of milk to make the batter smooth. Flour your hands and pat the dough into the prepared pan. Press the dough 1/2 inch up the sides of the pan. Place the blueberries on top of the dough. Combine the streusel ingredients and sprinkle on top. Bake at 375 degrees for 25-27 minutes. Let cool to room temperature before serving.

On the cooling rack

This is why I love a springform pan

This dessert is like a giant sugar cookie topped with blueberry cobbler.

Way yummy.

I had to hose off the walker and stick the baby in the bath right after this. I *may* have to burn his outfit. Next time he eats this - he is going to be naked and in the high chair. The way he should be every time he eats, actually.

Of course! He'll keep buying blueberries as long as you keep making him goodies!
