Christmas Cookies

This year we undertook the making of the most Christmas Cookies we had ever made in a single year.

Lex is the best baking helper.  He even has his own set of spatulas that he sneaked into a shopping cart at a store one time and I purchased for him without realizing it until we got home.

Yes, we included longhorns and TIE fighters and the Millenium Falcon in our Christmas cookie set.  Because awesome.

These dark chocolate cookies with peppermint bark bells were new for us this year, so I'm going to write down the recipe here.  Because they were delicious.  They disappeared quickly, and we will want to make them again.

Ingredients:

1/3 cup butter, softened
1/2 cup brown sugar
3/4 cup sugar
1 egg
1/3 cup plain Greek yogurt
2/3 cup Hershey's dark cocoa powder
1 tsp baking soda
1 1/2 cups flour
36 Hershey's peppermint bark bells, unwrapped

Directions:

1.  Beat butter and sugars.  Add yogurt and eggs and beat again.  Add dry ingredients and beat until mixed.  Roll into 36 balls and place on a baking sheet.  The balls will be very sticky.

2.  Bake at 350 degrees for 8 minutes.  Cool for one or two minutes, press a candy into the center of each cookie.  Allow to cool completely.
