This afternoon I watched an episode of Top Chef on Bravo, and it got me in the mood to cook something new for dinner. I knew that we had an eggplant, so I decided to look up recipes in my cook books that used eggplant. I was surpised to see Ratatouille in there, as I just thought it was the name of a new cute-looking Pixar movie starring an animated mouse.
Apparently, it is also a French vegetable dish with eggplant, tomato, onion, zucchini, garlic and bell peppers. Since we had everything that I needed on hand, I went ahead and made it, and it was super easy to make and very delicious! I served it as a side dish with our terryaki portobello mushrooms and rice. I didn't think about it at the time, but the entire meal ended up being vegetarian, since there wasn't any meat in any of the dishes
